About my research...
We study the chemistry and physics of food materials, cosmetics and lubricants, with special emphasis on lipids. We focus our work on fat mimetics including gelled oil, or oleogels, structured emulsions, but also work on delivery of lipid-soluble nutraceuticals and pharmaceuticals. We used advanced analytical techniques to characterize and engineer the nanoscale of lipid materials to achieve specific macroscopic functionalities, including nutritional properties.
How my research improves life...
We have been actively involved in the removal of trans fats and reduction in saturated fats from processed food products. This has been proven to reduce the incidence of cardiovascular artery disease and improve the quality of life. We have created several encapsulation systems for the delivery of lipid-soluble nutraceuticals and pharmaceuticals as food and cosmetic products.
